Chocolate Chip Buttermilk Pancakes
We woke up this morning to a clear blue sky and sunshine! Also with the ground covered in several inches of snow and a temperature of 4 degrees outside. So I decided I wanted warm, gooey chocolate chip pancakes to distract me from being so cold! Also because for the
first time ever, I woke up before Monkey did and had the time to make them without a little person reminding me that it's taking me too long to make breakfast...
Chocolate Chip Buttermilk Pancake Recipe
1 Cup Buttermilk (or 1C Milk + 1TB Vinegar)
1 Tb Sugar
1 tsp. Vanilla
1 tsp. Baking Power
1/2 tsp. Baking Soda
1/2 tsp. Salt
2 Tb Veg. Oil
1 Cup Flour
1 Handful Chocolate Chips (optional!)
I have never made it a habit to keep buttermilk in the fridge. So I start this recipe with 1 cup milk and 1 Tb vinegar in my mixing bowl. I wisk them and let it sit for a minute or two while I gather the rest of the ingredients. Then I add everything else in the order above. Make sure to wisk most of the lumps out.
Then let your batter rest for about 5 minutes while you wait for your skillet to warm up to 250-300 degress. I've noticed that the longer it rests the fluffier my pancakes turn out!
Sprinkle on your chocolate chips. Unless your me, my dad, or brother. Then you place them in an even pattern to ensure that you will have a chocolate chip in every bite!!
When the bubbles start to "pop" then you are ready to flip! These ones were for Monkey that's why they don't have any chocolate chips...

I asked Monkey if he likes my pancakes and this was the giant, cheesy smile that I got! Haha so cute...
